Why precision cooking needs more than your eyes and a probe.

Thermal Vision vs. Probe Thermometer

The probe thermometer is the best tool you're not using right. It tells you the temperature — of one spot. Half an inch to the left? Completely different. The edge of the pan versus the center? Worlds apart. Flip your steak, and the probe has no idea what the new surface temperature is until you stab it in again. By then, you've already guessed wrong.
